Fried Rice With Pork

Fried rice with pork is a stove top meal in one recipe. Add a salad and beverage and enjoy.

Ingredients

2 thin pork chops
1 cup Original White Rice
2 1/4 cups water
2 T oil, butter or margarine
1 medium white onion
1 green pepper
Bottled soy sauce

Instructions

Bring water to a boil in a saucepan with 1 Tablespoon oil or butter. Add the rice, cover and let simmer slow for 20 minutes until rice is almost dry and done. Do not add salt to the water you cook the rice in.

In a large skillet brown the pork chops on both sides in 1 tablespoon oil, butter or margarine, then cook until done. Do not add salt to the pork chops. You may add black pepper to the pork chops if you like. Remove the pork chops from the pan and set aside.

Dice the onion and the green pepper and put into the large skillet you cooked the pork chops in. If you need a bit more juice in the skillet, you could add a dash or two of soy sauce. Cook the onions and green pepper until done and the onions are browned.

Cut the meat off the pork chops cut the meat into small pieces (about the same size as the diced onion and green pepper.

When the onions are done (or almost done) add the meat to the onions and green pepper. Add the rice to the skillet and continue cooking on low. Add 2 to 3 tablespoons of soy sauce to the skillet and stir well while cooking. Keep adding soy sauce until the rice is coated and is a light tan in color.

Add soy sauce to taste and serve with a salad and bread of your choice.
