    Food Substitutes

    If you've ever lived 60 miles from the nearest grocery store and you get to the grocery store only once a month, you will at some point be cooking and find you don't have one of the necessary ingredients for your recipe. Thank goodness for friendly community of people living in a small mining town and their combined knowledge of cooking substitutions ( and by occassionally borrowing an ingredient) no one every had to waste a meal because of a missing ingredient.

    A list of food substitutes and cooking substitutes that might be useful the next time you are baking or cooking and find you don't have one of the ingredients for the recipe.

    Grateful thanks to the long ago Eagle Mountain, California Kaiser Steel Mining Company community for many of the substitutions listed below.


    Food Substitutions

    Need

    Substitute

    Allspice: 1 teaspoon

    1/2 teaspoon cinnamon
    1/2 teaspoon ground cloves

    Baking Powder: 1 teaspoon

    1/3 teaspoon
    1/2 teaspoon cream of tartar

    Bread Crumbs: 1 cup

    1 cup of cracker crumbs

    Broth, beef or chicken: 1 cup

    1 bouillon cube in 1 cup boiling water

    Butter: 1 cup

    Almost 1 cup of oil
    1/2 teaspoon of oil

    Buttermilk: 1 cup

    1 tablespoon of vinegar to 1 cup of milk
    or
    1 tablespoon of lemon juice to one cup of milk
    or
    1 3/4 teaspoons of cream of tartar to one cup of milk

    Catsup: 1 cup

    1 cup tomato sauce
    1/2 cup sugar
    2 tablespoons vinegar

    Cornstarch for thickening: 1 tablespoon

    2 tablespoons of all purpose flour
    Cream, Half and Half: 1 cup

    1 cup milk
    1 tablespoon melted butter
    Cream of Tartar: 1/2 teaspoon

    1 1/2 teaspoon lemon juice
    or
    1 1/2 teaspoon vinegar
    Eggs

    1 tablespoon cornstarch
    3 tablespoons water for each egg
    or
    3 tablespoons mayonnaise for each egg
    or
    1/2 ripe mashed banana
    1/4 teaspoon baking powder for each egg
    Lemon Juice: 1 teaspoon

    1/4 teaspoon cider vinegar
    Macaroni: 4 cups uncooked

    2 cups spaghetti uncooked
    or
    4 cups noodles uncooked
    Onion Soup Mix

    1/2 teaspoon onion powder
    1/4 cup instant minced onion
    2 tablespoons bouillon
    Pumpkin Pie Spice

    4 teaspoons cinnamon
    2 teaspoons ginger
    1 teaspoon allspice
    1 teaspoon nutmeg
    or
    1 teaspoon cinnamon
    1 teaspoon ginger
    1 teaspoon nutmeg
    1 teaspoon mace
    1 teaspoon cloves
    Sour Cream: 1 cup

    1 cup yogurt, plain
    1/4 cup instant minced onion
    2 tablespoons bouillon
    Sugar: 1 cup

    1 cup brown sugar, packed
    or
    2 cups sifted confectioners sugar
    Tomato Sauce: 2 cups

    3/4 cup tomato paste
    1 cup water
    Molasses: 1 cup

    1 cup honey
    Molasses: 1 cup

    1 cup honey
